Interestingly, people have been eating pistachios since 7000 BC. Nowadays, they're very popular in sweet dishes, including ice cream and desserts. Why not combine them with other nuts, dried fruits and seeds in a scrumptious trail mix or roughly chop and added to muesli, granola, yoghurt or smoothie bowls.
Unsalted pistachios can be activated by soaking them in water for 12 hours, before slowly dehydrating at very low heat. Or grind them to make yummy dairy-free nut butter – wonderful for vegans and in raw food recipes.
Coarsely ground pistachios are also great in veggie burgers, pesto, dips and as a base for sauces; use them to replace peanuts in satay sauce.
