They boast several other important nutrients. These include vitamin B6 and potassium. 28 grams of raw pistachios contain more potassium than half a large banana! Interestingly, people have been eating pistachios since 7000 BC. Nowadays, they're very popular in sweet dishes, including ice cream and desserts. Why not combine them with other nuts, dried fruits and seeds in a scrumptious trail mix or roughly chop and added to muesli, granola, yoghurt or smoothie bowls.
Unsalted pistachios can be activated by soaking them in water for 12 hours, before slowly dehydrating at very low heat. Or grind them to make yummy dairy-free nut butter – wonderful for vegans and in raw food recipes.
Coarsely ground pistachios are also great in veggie burgers, pesto, dips and as a base for sauces; use them to replace peanuts in satay sauce. Toss pistachios over fresh salads, or add to couscous and rice dishes. Pistachios are also a delicious addition to bread, muffins, cakes and biscuits including traditional Biscotti. Or use them in home-made ice cream and confections such as baklava, halva and raw, vegan or dairy chocolate.
